On a healthy and tasty note, Chebe offers its gluten and grain free Chicken Pita with Garbanzo and Greens. It’s easy, delicious, and is a meal in itself.
- boneless chicken breasts, 2 or 3
- 1/2 red onion, minced
- 1 can garbanzo beans, 15 oz, drained and rinsed
- 2 Tbsp olive oil
- juice from 1/2 lemon
- 1/2 cup plain yogurt
- 2 tomatoes, sliced
- 2 cups greens (baby spinach or arugula), roughly chopped
- Sea salt and freshly ground pepper
- 1 package (7.5 oz) All Purpose Mix, or any savory Chebe flavor
- 2 large eggs
- 2 Tbsp oil
- 1/2 cup (2 oz) Parmesan or sharp cheddar cheese, shredded (optional)
- 4 Tbsp milk or milk substitute

Season chicken breast and grill, broil, or sauté until done. Slice into strips.

In a bowl, combine garbanzo beans, onion, oil and lemon juice. Season with salt and pepper.

Preheat oven to 375F. Prepare Chebe dough according to package directions, adding only 2 oz. cheese. Knead until the dough is smooth and then separate into 6 pieces (about 2.5 oz. each).

Flatten each piece into 5"-6" pita rounds and place them on an ungreased baking tray. Brush with oil. Bake for 12-14 minutes.

In a bowl, season the greens with salt and pepper.

Spread the yogurt over each pita, then top with the tomatoes, greens, garbanzo mixture, and chicken.
