For those who have been gluten free for some time, having comfort foods like Chicken and Dumplings is only a memory. But not with gluten and grain free Chēbē. All of that mouth-watering, savory flavor you remember is what's for dinner!

Course: Main Course, Soup
Ingredients
Soup:
  • 2 tbsp . cooking oil
  • 1 ½ lbs boneless chicken thighs or breast
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1/4 cup chopped celery
  • 1/4 cup chopped carrot
  • 6-8 cups water
  • 1 bay leaf
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 tsp fresh ground black pepper
  • 2 tsp salt All spices can be adjusted more or less to ones' own preference.
Dumplings:
  • 1 package (7.5 oz) Chebe All Purpose or any Chebe savory mix
  • 2 eggs
  • 1 tsp baking powder
  • 2 Tbsp oil
  • 4 Tbsp water, milk or milk substitute
  • 2 Tbsp fresh herbs, e.g. thyme, oregano, rosemary optional
Instructions
Soup:
  1. Brown chicken in the oil until golden brown. Then add onion, garlic, celery and carrot. Stir until the vegetables are softened. Add water, bring to boil then cover and reduce heat to simmer.
  2. Add herbs, salt and pepper. Continue simmering for about 30 – 40 minutes.
  3. As soup simmers, prepare the dumplings.
  4. Remove the chicken from the soup, place on a board and tear or cut into smaller pieces.
  5. Bring soup to a boil. Drop in dumplings one at a time, then turn the heat down to simmer.
  6. Return chicken to the soup. Cover and simmer for about 10 minutes, occasionally covering the dumplings with the broth. (Do not overcook!)

Dumplings:
  1. Prepare Chebe mix according to package directions (do not add cheese). Add herbs if desired.
  2. Knead dough with hands until smooth.
  3. Pull small bits from the dough (nickel to quarter size – they will expand) and set aside until ready to place in the soup.

  4. There should be dough left over. Shape into rolls or breadsticks and bake according to package instructions. A great accompaniment to the soup!

 

This recipe works great with Chēbē All-Purpose Mix, but you may also try it with these Chēbē mixes:
