Fun to make, fun to eat, and mega taste! A great blend of flavors make these BBQ Chicken Pizza Rollups a sure hit with everyone at the table!

- 1 package (7.5 oz) Chebe Pizza Crust Mix
- 1.5 oz Parmesan cheese, (or dairy free cheese) shredded
- 2 large eggs, or aquafaba*
- 4 Tbsp milk or milk substitute
- 2 Tbsp oil
- ½ cup BBQ sauce
- 6 oz (170g) cooked chicken shredded (May use leftover rotisserie chicken)
- 1 cup sharp cheddar cheese, (or dairy free cheese) shredded
- ½ cup red onion, finely chopped
- Small bunch fresh cilantro, chopped

Season an 8 oz chicken breast with salt and pepper. Place in a pan and cover with water an inch over the breast.

Boil, then reduce to simmer for about 10 minutes. Remove from water and let cool.

Shred with fork or with your hands. Season lightly with salt and pepper. Set aside.

This yields about 6 oz. cooked chicken. You may do this ahead of time and store it in the refrigerator for up to a couple of days.

Preheat oven to 375F. Prepare dough according to package directions, using only 1.5 oz cheese. Mix until dough is smooth and well blended.

With your hands, press dough into a rectangle of about 4”x6”. Prepare a clean surface for rolling the dough with a rolling pin. You may wish to dust the surface with a gluten free flour or food starch.

Roll the dough into a rectangle of about 11”x15”.

Brush the surface with BBQ sauce, then spread evenly over it the chicken, cheese, onion and cilantro.

From the long end of the rectangle, roll the dough into a log with the fillings inside. Using your finger, wet the edges of the dough with a little water to seal the dough.

Make ¾” cuts in the log with a knife, giving you about 12 or 13 pieces (rollups). Lay the rollups on a baking pan and brush each with a little of the BBQ sauce.

Bake for 15 minutes and dig in!
*For an egg-free version, use 6 Tbsp aquafaba.
This would be a great pizza, too!. When the dough is flat, bake for 8 minutes at 375F, remove from the oven and top with the fillings. Return to the oven for another 8 - 10 minutes!
