With a heart-shaped cookie cutter and on top of a baking pan, press in a piece of dough to about ½” high. Push the shaped dough through the cutter. This shapes the first leaf of the shamrock. For each shamrock, make 3 leaves and form the stem by hand. Arrange each of the four pieces in the shape of a shamrock. Continue until all of the dough is used.
Have some oil handy to grease the cookie cutter so that the pressed dough slides easily through it.
Egg wash works well to make the finished bread more golden and a little more crusty. However, you may omit this step if you wish.
