This recipe was provided to Chēbē by Primal Feast Foods and it looks absolutely fantastic! Loaded with chicken, bacon and spinach… they eve tossed on some dried cranberries to give it some spunk! Gotta love that paleo diet!
- 2 Tbsp coconut oil
- 1 Tbsp ghee or butter
- 4 strips bacon, cut into 1/2 inch strips
- 1/2 red onion
- 12 oz pre-cooked chicken breast
- 1 tsp garlic flakes
- salt and pepper
- 1/4 cup extra virgin olive oil
- a couple handfuls baby spinach
- 5 oz goat cheese
- 1/3 cup dried unsweetened cranberries
- 1 package (7.5 oz) Chebe Pizza Crust Mix
- 2 Tbsp olive oil
- 2 large eggs
- 4 Tbsp almond milk or water
Preheat oven to 450F.
Prepare the Chebe pizza crust using the ingredients listed for a dairy free crust OR prepare according to instructions on box.
Spread dough onto an ungreased baking sheet or pizza pan, size of your choice (we used an 11x14 baking sheet).
Heat coconut oil, ghee and garlic flakes in a frying pan. Add bacon, onions & peppers. Sauté until almost caramelized.
Slice chicken breast into bite size pieces and add to pan. Salt and pepper to taste. Turn down heat and keep warm.
Spread a layer of baby spinach on unbaked crust. Add pizza toppings on top of the spinach. Top with crumbled goat cheese and dried cranberries. Drizzle lightly with extra virgin olive oil.
Bake for 15-18 minutes until crust is lightly browned. Drizzle lightly with extra virgin olive oil again before serving.
