Chebe Gluten Free Snickerdoodles

Snickerdoodles are a favorite of all, and these are gluten and grain free! (See the dairy free /vegan option below!)

Ingredients
Cookie Dough:
  • 1 package (7.5 oz) Chebe All Purpose Mix or Chebe Original Mix
  • 1/2 tsp baking powder (if using Chebe Original Cheese Bread Mix)
  • 8 Tbsp (1 stick) butter, room temperature (dairy-free margarine may be used)
  • 1 cup sugar
  • 1 egg, or aquafaba*
  • 1 tsp vanilla
For cinnamon sugar topping:
  • 1/4 tsp cinnamon
  • 1/8 cup sugar
Instructions
  1. Preheat oven 350F

  2. With an electric hand mixer, cream butter and sugar. Blend in one egg and l tsp of vanilla. Continue mixing until well blended.

  3. If using baking powder, blend it into the Chebe mix. With a fork or mixing spoon, gradually add in the Chebe mix and blend until it all comes together.

  4. Chill dough for 20 minutes.

  5. Portion the dough out with a scoop or spoon, walnut-sized.
  6. Roll balls in cinnamon sugar mixture.
  7. Bake cookies on parchment paper, for 15-20 minutes, or until lightly browned.
Recipe Notes

*For an egg-free version, use 3 Tbsp aquafaba.

 

These cookies are so easy to make and they freeze very well. Store in an air-tight container or zip lock bag.
